Mastering the Flames

Cooking with the Karu 2 is all about control. The oven’s rear and chimney baffles allow you to adjust airflow and fine-tune the intensity of the flames.

  • For high-temperature cooking (e.g. Neapolitan pizza, searing steaks), keep both the rear and chimney baffles fully open.
  • For lower temperatures (baking, roasting), leave the rear baffle fully open and close the chimney baffle.
  • For slow roasting or smoking (meats, fish), preheat with both baffles open, then close them once the oven reaches your desired temperature to trap heat and smoke.
