Italian Stallion Meat Rub

Italian Stallion Meat Rub brings a little of Nonna’s Sunday lunch to the backyard barbie. Basil, oregano and rosemary give this Italian-style blend its fragrant, herby flavour, while garlic and tomato add a savoury richness that’s right at home on a grilled lamb chop.

Mix the rub with a splash of olive oil and brush it over lamb, chicken thighs or pork cutlets before grilling. For Sunday’s roast, toss potatoes, capsicum and zucchini through the same mix, then roast until the potatoes are golden and the capsicum is sweet and soft at the edges.

On pasta night, stir a spoonful into your simmering tomato sauce, toss through hot rigatoni and finish with a generous grating of parmesan. Keep some crusty bread handy for the last swipe of sauce. Nonna would approve.
